LASANG PINOY SUNDAYS: SEAFOOD: SALMON FISH FRY W/ MANGO & SCALLIONS RELISH
I saw a pack of Zatarain’s Fish Fry Mix at the store so I figured I’d try it with the pretty looking salmon I bought at BJ’s. Something for a change. Fish Fry usually uses cod or haddock but I decided to be “fancy” and used salmon instead.
PORK ADOBO W/ COCONUT MILK & SCALLIONS
In some regions of the Philippines, coconut milk is one of the ingredients in the dish called ADOBO which happens to be one of my favorite Filipino Dishes. It’s either in pork or chicken. Pork is my pick any day. Anyhoooo, in my cooking years, I’ve never made adobo with coconut milk until a week ago. I finally opened my new Aroma digital rice cooker to cook rice, of course after not eating rice for almost 2 weeks. I decided to make pork adobo as well to go with the rice. In a spur of ...
LOBSTER BISQUE FROM LEGAL SEA FOODS
Part of my husband’s birthday dinner last week was Lobster Bisque. I did not make it as indicated in the title and by the picture itself. I bought a pre-made one from a wholesale store called BJ’s. The Lobster Bisque is from Legal Sea Foods brand. 2 containers of this size cost $11.99.
LASANG PINOY, SUNDAYS: ROLLED – STUFFED PORK ROAST W/ SPINACH & MUSHROOMS
Lasang Pinoy, Sundays theme this week is ROLLED. It worked out perfectly coz I have this stuffed pork roast with spinach and mushroom ready to roll, so to speak ;) . This pork started as a pork loin. I cut it in half without going all the way to the bottom, and then butterflied the sides to get a flattened pork plank, pretty much. Once that’s done, stuffing it with anything you like is a breeze.
FAJITAS TEXANAS ALA FEISTYCOOK
My favorite dish to order when going to the Mexican restaurant, La Cocina, is the Fajitas Texanas. Basically, it’s a sautéed goodness of beef, chicken, and shrimp with onions and green peppers. Then you get a side plate of shredded lettuce, Spanish rice, refried beans, sour cream and guacamole (optional). Even though I ordered this dish on Valentine’s Day lunch, I decided to create my own version tonight. Sans the green peppers, rice, and lettuce. Plus I served the avocado as is instead of guacamole.
BACARDI SILVER WATERMELON
I think the last time I drank anything Bacardi (it comes in different flavors) was 3 years ago. I still remember the heartburn I got from it. It’s the same heartburn I get when I drink Smirnoff which I also haven’t touched in a long time. Last Friday, my husband came home with a 6-pack for me. He thought maybe I’d like to try it. Isn’t he sweet?
BACON & CHEESE BURGER ON WHEAT BUNS
Burger King’s Burger King Double Stacker is currently my favorite from BK these days. That bacon is really good. Don’t get me wrong, I’m still a Junior Whopper kind of girl hehe. But yeah, Burger King Double Stacker is good. We do indulge on fast food burgers once in a while, especially when out on errands and we had to grab something quick. However, as much as possible, we like making burgers at home as well. Hubs and I don’t really like the premade patties. We prefer making them ourselves. My husband’s “signature” burger to make is ...
KIMCHI AND CUTTLEFISH STIR-FRY
My husband and I love Kimchi. Having spent a year in Korea while serving in the Army back in 2003, my husband had tasted the best Kimchi. He said people there eat so much of it and they also have different dishes where kimchi is incorporated into the dish inself instead of just being on the side when meals are served. One particular dish he keeps talking about is the combination of pork cubes or cutlets and kimchi. I’ve made it once but I don’t think it was all that great coz I added too much ...
LEMON TILAPIA FILLET
For this lemon tilapia fillet dish, I adapted the recipe from my lemon chicken recipe. It was easy to prepare, fast too cook, and simply delicious. Coz when it comes to fillets, simplicity goes a long way.
SELF-FROSTING NUTELLA CUPCAKES
When I bought the jar of Nutella last weekend I made a vow (yes I did) that part of the Nutella will be made into cupcakes. I’ve always planned to do that whenever I buy one but it never gets that far. Darn those nutella sandwiches and occasional spoon licking. Well, I finally made self-frosting nutella cupcakes and golly they were so beautiful and delicious.

Organic Greens W/ Boiled Egg & Italian Dressing
I got hungry one day but didn’t want to eat any of the sweet treats or chips we got in the house. I remembered we had organic salad in the fridge but I wanted to spruce it up. Baked Chicken Caldereta
Whenever I visit the Filipino/Asian store nearby, I always grab a few packs of different mixes. Mostly I grab caldereta, menudo and sinigang mixes.
